Holy Yummy Batman! The Personal Pesto Chicken Meatza from PaleOMG was to die for. You take a perfectly lovely hamburger patty and make it SHA-ZAM! You can use store-bought pesto for this dish, but frankly, I loved the fresh flavor of making my own. This pesto had basil and walnuts, which were a perfect combination.
I had company over when I served this dish and everyone was raving about its deliciousness. It is a terrific way to use up any leftover chicken (or any meat for that matter) that is in your fridge. Your hamburger patty makes the pizza crust, if you will, and then you add pesto, tomatoes and chicken as your toppings. Plus, I love the fact that it is a one pan meal. It all gets baked in the oven!
Here’s an easy way to make your own pesto at home for any dish!
Ingredients:
basil (or any green; kale, spinach, watercress)
olive oil
pine nuts (or any nut; cashew, pecans, almonds, walnuts)
2 garlic cloves (whole cloves or chopped)
Add two handfuls of basil and one handful (1/2 cup) of nuts to your food processor. Pulse until the nuts are broken up. Add your garlic and pulse again. Finally, add a thin stream of olive oil in your food processor while running. (Open up that nifty little plastic hole in the lid if you have one.) Go easy on the olive oil until you determine how thick the paste will be. Then, enjoy!
