Had a delish leftover idea tonight. Sometimes when I use spaghetti squash for a recipe (i.e.: to make a crust) I end up with leftover squash. Yesterday was such an occasion. I found the little Tupperware container looking lonely in the fridge today. Snack time!
I added butter and cinnamon and then warmed it up in the microwave. Easy peasy.
I hear the angels giving a Hallelujah. It was creamy, savory and so-so satisfying.
Give it a try. It is worth making a whole spaghetti squash just to try this technique. Your belly will thank you.
