Do you have a small container of pumpkin sitting in your fridge?  Leftover from making pumpkin pie, perhaps?  Well, I did and decided to whip up a little pumpkin goodness for my breakfast this morning.

It had all of the wonders of pumpkin pie, without the crust.  Trust me, you’ll like it.  Liquid pumpkin pie… mmm…

Pumpkin Pie Smoothie

Ingredients:

1/2 cup pumpkin puree (not canned pumpkin pie mix with additives)

1 cup coconut milk

1 1/2 Tbsp honey

1/2 frozen banana

1 tsp vanilla extract

1/2 tsp each ground ginger, allspice, cloves, nutmeg

1 tsp cinnamon

Ice cubes

Blend all ingredients until smooth.  Sometimes I find that ground cloves (despite going through a blender AND already being ground) still have hard bits in them.  So, you may want to run the whole thing through a sieve and into your glass before consuming.  It’s not too fun to be picking brown bits out of your teeth all day.  Or, crunching down on one.
