Well, let’s be frank, it’s not pizza.  It is wonderful deliciousness though.  The spices were spot on!  So, while the kids have Dominos you and your other half can eat Paleo.  🙂


4 zucchinis (whole)

1 1/2 cups tomato sauce (or marinara)

1 package pepperoni

Italian spices (mine is in a grinder)


Preheat the oven to 375 degrees.  Boil the whole zucchinis for about 5 minutes.  Yes they are whole, they will get cut up after the boiling process.  Once these are done, cut them in half and scoop out the centers.  This makes room for the sauce.  You will then combine the “scooped goop” with your tomato sauce.  Carefully ladle it back in the zucchinis (which are placed on a foil lined baking sheet).  Put your yummy pepperoni along the top and bake for 20 minutes.  Add the Italian seasoning to the top and serve fresh from the oven.

Super quick and easy for a busy weeknight.
